Appetizers
At F&G's, our kitchen and wait staff work very hard to reduce the amount of time it takes to prepare your order. Unless you can't resist, why should you have to eat a mini-meal while we cook your dinner. (Besides, we'll have plenty of fresh baked bread at your table to hold you over before your meal arrives.) Nevertheless, let's suppose (for the sake of argument) you'd like something to snack on while waiting for your table, or perhaps you've decide to stake your claim around the bar. In that case, we offer several tastey appetizers that we think you (and the friends you've just made who bought your last round of drinks) will enjoy:
Combination Quesadillas
Everything delicious wrapped in a toasted tortilla. Serves two (six slices).
2 large soft flour tortillas
4 oz of shredded jack and mild cheddar cheese
2 oz cooked whole black beans
2 oz diced red onion
2 oz roasted sweet corn
2 oz diced tomatoes
2 oz marinated and grilled beef and chicken (equally)
2 tablespoons of butter.
1 tablespoon of Fresh chopped Cilantro and Tobasco sauce (equally)
In a heated (medium high) saute pan or on a grittle, drop 1 tablespoon of butter (per tortilla). Evenly coat the pan surface with the melted butter and lay down the tortilla, sweeping the tortilla covering one side with the butter. Once heated, sprinkle 2 oz of cheese over half of the tortilla (like a smile) and add 1 oz of each ingredient evenly over the top of the cheese as it's melting. When the tortilla is slightly brown, sprinkle Cilantro and Tobasco, and fold over to cover the added ingredients. Flip over tortilla and heat for a few seconds more. Remove from the pan/grittle, and cut into three equal pie-shaped slices. Repeat (perferrably simultaneously) with the remaining ingrediates. Place on a heated platter, and garnish with sour cream, shredded lettuce, and fresh Pico de Gallo.
